Instructions:
In a large pot, heat the olive oil on medium temperature and add the garlic, the onion, and the carrot first. Cook for about 10 minutes and then add the chicken broth.
Bring to boil and add the lemon juice, lemon zest, as well as chili powder, salt, pepper, thyme, and cumin.
Next, add the seasoned tomatoes, the drained chickpeas, and the kale.
